**From Empty Dreams to Harbour Views: The Birth of On the Quay**

When Phil first stood in the empty building overlooking St Mary's harbour in 2017, most people saw just another vacant space. But Phil saw something different – he saw possibility.

"The building was nothing special back then," Phil recalls, "but the view... that view of the harbour told me stories of what this place could become."

Today, that same space hums with life as On the Quay restaurant, where the aroma of freshly caught seafood mingles with the salt air, and the sound of happy diners fills three distinct dining spaces – each offering its own unique perspective of the harbour that started it all.

But the journey from empty shell to thriving restaurant wasn't just about construction and renovation. It was about building something bigger: a commitment to the community, to sustainability, and to creating experiences that would last a lifetime.
